On Saturday 14th March 2026, guests of the Seven Incorporated Trades of Aberdeen gathered at the historic Trinity Hall for a memorable Spring Tasting Menu. The evening celebrated seasonal ingredients, exceptional culinary skill, and the warm hospitality for which the Trades are known.
The six‑course menu was crafted to highlight freshness, creativity, and balance. Each dish was accompanied by a carefully selected wine pairing designed to enhance the flavours on the plate.
A Journey Through Six Courses
North Sea Crab Salad – A light and vibrant opening course featuring delicate North Sea crab, creamy avocado, and a crisp savoury tuille.
Garlic & Black Pepper Pork – Tender pork paired with bok choi, cucumber, and chilli oil, offering a bold and aromatic combination of flavour and texture.
Cod with Surf Clams – Perfectly cooked cod complemented by surf clams, salsify, shimeji mushrooms, and watercress; a refined meeting of ocean and earth.
Duck with Cherry Mustard – A guest favourite. Rich duck served with bubble & squeak, cherry mustard, hazelnuts, and a luxurious duck sauce for a modern take on comforting flavours.
Caramelised White Chocolate – A sweet yet refreshing dish featuring caramelised white chocolate, rhubarb, and pistachio; an indulgent nod to spring.
Cheese Course – The evening concluded with a classic cheese selection, served alongside the final wine pairing for a savoury finish.
